The quietly charming Didier Séguier gave us a warm welcome in Chablis and a fabulous tasting. He describes this vintage as "l'année du terroir", a vintage which particularly allows the different vineyard sites to really express themselves - assuming the winemaker allows it! This is great news for lovers of classic Chablis, as the various plots really do display markedly different characteristics, underpinned with the minerality and acidity that accompany all great Chablis. Yields were down a little due to poor weather during flowering, but the summer was good and the fruit harvested was ripe and concentrated. Despite concerns about the weather in September, and the potential for rot, the grapes were brought in before the rains hit on 26th September and quality overall was very good. There was a little botrytis in some vineyards, but the selection tables were rigorously used and Didier was very happy.  There was a high level of malic acid and the fermentations here were long and slow, giving rise to nuanced, classic flavours.

The Domaine is in the process of becoming fully Biodynamic. The first vineyard sites were converted five years ago and the rest are following with Fèvre being one of only six out of the hundreds of growers in the region committed to this path. Didier is convinced that this change is enhancing the quality of the fruit and the resulting potential of the wine. It is clear that Didier has made beautiful wines in  2010 and a selection of these is an essential addition for any serious Chablis lover's cellar.

Chablis 2010

Very pretty, shimmering pale gold. Open, fresh citrus notes with floral overtones. In the mouth this is enhanced with a white peach fruit character and a mineral undercurrent. Fresh and very appealing with good acidity. Drink from release.

 

Vaillons

Chablis 1er Cru Vaillons 2010

This sunny spot was the first to be converted to Biodynamism five years ago. The vines benefit from a South East facing slope and generally achieve a good level of ripeness. This year was no exception and the wine is rich and welcoming with a lovely texture. The core of fine minerality and a seam of acidity balance the weight of fruit perfectly. Very good indeed. Drink 2013-2018.

  

Tonnerre

Chablis 1er Cru Montée de Tonnerre 2010

A classic expression of Montée de Tonnerre. Flights of fancy on the nose, with sherbet, lime zest and orange flowers lifting out of the glass. Fine, stony minerality and a very pure, clean acidity create the perfect framework for the juicy fruit. Beautifully precise with  great length. Over time some of the fruit power currently on show will settle down and this will develop into a subtle, precise delight. Drink 2014-2020.

  

Vaulorent

Chablis 1er Cru Vaulorent 2010

Dense perfume and an immediate hit of rich, ripe fruit are immediately followed by a delicate tracery of top notes. Extremely pretty floral, spicy and orange-zest characters take over.  The mouthfeel is silky and light but there is plenty going on here. Flowers, spice and candied fruits lie across an intensely mineral, stony framework, but with a soft, seductive character. Impressive and demanding but utterly charming too. Drink 2014-2021.

 

Valmur

Sparkly green and gold flecks catch the light. The nose is very upfront with lots of ripe yellow plums and greengages, following through in the glass with good poise and a very alluring weight and density. The structure needs a little time to pull itself together, the mineral character is clearly evident and given time, along with the  backbone of brisk limey acidity, will provide perfect balance in what will be a very satisfying Valmur. Drink 2015-2023.

 

Bougros

How lovely. Sherbet and ripe fruit hurtle out of the glass, chased along by a beguiling sense of the sea. A hint of ozone, shell and fruits de mer provide the perfect mineral foil to the fruit. Very linear and precise, this beautiful Bouguerots guides you through to a long and delicious finish. Absolutely delightful. Drink 2015-2022.

 

LesPreuses

Chablis Grand Cru Les Preuses

First impressions are of grapefruit, yellow melons, acacia honey and rose petals. The almost Riesling-like perfume suggests sweetness, but this is absolutely dry.  Full-bodied and round, the fruit character becomes more candied and concentrated in the mouth. The acidity is taut and touches of flint, smoke and green tea bring the whole thing into perfect balance. Very long mineral finish. This is sophisticated and refined and will be well worth the wait.  Drink 2015-2025.

 

LesClos

Chablis Grand Cru Les Clos

The initial spicy, citrus hit is overt and intense, followed by a rush of sherbet shooting up out of the glass. Candied lime with greengage fruit, spice and a hint of toasted macadamia nut join in on the palate, underpinned by racy, linear acidity. Extremely complex, but delicate and harmonious. The overall sensation is of a delicate  filigree  of flavours, with a lacy ethereal quality. As the wine opens up in the glass more and more layers reveal themselves. Characterful with a real sense of purpose, but incredibly elegant at the same time, it envelops the tastebuds but never smothers them. Truly a magnificent, exciting Les Clos, this has great finesse and a calm stateliness. Not to be missed.  Drink 2015-2025.
