2005 Chablis from Domaine William Fèvre

If awards were to be given out in the wine world for most improved producer, Domaine William Fèvre would be a contender for the top accolade. In 1998, a new team was assembled as a result of the purchase by Joseph Henriot and the results have been nothing short of electrifying. When you carefully apply this kind of talent and resource to a domaine with some of the finest holdings in the region results are expected, but to have reached such heights so quickly is quite extraordinary.

Lemon fresh, hints of orange peel and minerals. Lovely definition with a fine bite of acidity. Excellent presence and a great example. Will be accessible younger than the other Grands Crus. Drink from 2009. add

Beautifully textured, silky fruit notes. Hints of flowers, pear skins and grapefruit. Glossy, intense and concentrated with an almost ethereal finesse on the finish. Quite exotic on the very, very long finish. Drink from 2009. add

Chablis Grand Cru Bougros Côte de Bouguerots - 320 IB

Bouguerots is a sub region within Bougros where the classic Kimmeridgean soil is at its most pure. Classic nose of gunsmoke and flint. Really classy, showing the extra dimension one would expect at top Grand Cru level. Smooth, ripe and rounded notes of hay and straw. Lovely balance and poise. Drink from 2010. add

Chablis Grand Cru Les Clos - £365 IB - SOLD OUT

Wonderfully complete already, this is simply stunning, boasting power, grace and presence. Classic notes of gunflint, flowers and deliciously ripe fruit literally dance across the palate. Superb wine already but keeping plenty in reserve. Huge potential. Drink from 2010

2005 is a wonderful vintage for Chablis. After the high standards of 2004, there was a tough act to be followed. What has become clear from our extensive tastings is that lovers of great Chablis will want both vintages in their cellars. Whilst the 2004s are perhaps a purer, more classic and more restrained expression of these noble slopes, the 2005s add richness, density and a sense of warmth to the mix, all accompanied by the laser-like precision for which Fèvre is now again famed.
 
The 2005s are already showing very well and the village and lighter premier crus will be terrific from release. The richer premier crus and the Grand Crus will certainly repay a few years in bottle, with the very greatest certainly having the capacity to age well into the middle of the next decade if so required.
 
Prices for the best Chablis remain extraordinarily reasonable, despite a drop in volumes of between 25% and 40% in 2005. The Fèvre wines are wonderful examples of this classic region and for those that seek pure, precise, refreshing, energetic and exciting wine, this is a very much a domaine for you to follow.
