History

Borthwick Estate is located in the heart of peaceful Wairarapa, twenty miles northeast of Martinborough, surrounded by stunning views. Paddy Borthwick comes from a family tradition dedicated to the international meat trade, but followed his passion into the wine industry. After 15 years of experience, 7 of which were spent abroad in France, Switzerland, Australia and the US, Paddy finally established the Borthwick family vineyard on an old stony river terrace on Dakins Road in 1996.

Why did you become a winemaker?
It was a new direction for employment at the time in New Zealand and the chance to study in Australia. After University it became the neverending challenge to produce the complete wine.
What is your favourite wine other than your own?
“All wines as there is intrigue and interest in trying and tasting a different wine.
What is your favourite smell or flavour?
Wild flowers, roasted cashew and macadamia nuts.

The Estate

Warm daily temperatures, cool nights and low rainfall give ideal growing conditions, resulting in the production of exceptional fruit. The wines are all produced and bottled exclusively from the Estate’s own 27 hectares of vines. The ‘minimal intervention’ approach to winemaking allows these distinctive wines to reflect the terroir of the vineyards and the characteristics of the region.

The Wines

The white grapes are harvested early in the morning to retain the aromas and acidity. The handpicked grapes are processed quickly before undergoing a long, slow fermentation in stainless steel, resulting in deliciously crisp, fresh whites. The Pinot undergoes warm fermentation, which is then followed by extended maceration and barrel ageing. Burgundian techniques and minimum handling result in a truly magnificent Pinot which will benefit greatly from bottle ageing. Paddy believes passionately that the quality of his wines is as much a testament to the excellence of his fruit as to his undoubted skill in the winery. Over the past year, Paddy has been developing a highly successful range of second label wines under the name ‘Paper Road’, so-called after a road that was initially planned to be ploughed through the middle of Borthwick Estate.

"We hosted Ra and Ian from armit along with a group of Sommeliers, fistly at the winery and then at home in the garden for an “all produced off the farm” dinner with a library tasting of previous vintages from the winery. Our family was more entertained than entertaining with the stories of new hotel heaters catching fi re and noisy sleeping room mates. An extremely enjoyable night: a fantastic effort from armit to bring over the team and great to see good food, great wine and raucous laughter around a table." - Paddy Borthwick
